Presented by Laura Tucker and Keith Dixon, this interactive class explores the critical link between our diets and climate change. Participants will learn how different foods contribute to greenhouse gas emissions. You will also gain practical, actionable strategies for adopting a more sustainable “food print”.

Topics include the impacts of composting food waste, various animal versus plant-based products, the role of food waste in the climate crisis, and the benefits of eating locally and seasonally. The class empowers us to make conscious dietary choices that are better for both personal health and the planet.

● Laura is the Education and Outreach Specialist for Jefferson County Public Works where she has been teaching home composting classes for 10 years and is a professional consultant in STEM education.

● Keith is a curious decomposer and founder of Return To Earth Community Compost. He started Return To Earth in 2024 as a way to build community resilience and help close the food waste recycling loop. https://www.rtecompost.org/
